This is perfect for a weekend brunch! Admittedly - a little sceptical, we road tested it on two kids... it was a WINNER - "the best breakfast ever". A good healthy alternative French Toast - and REALLY it's just as good... with the maple syrup soaking into the toast, the crunch of the nuts, seeds and grains, the creaminess of the yoghurt and the lovely freshness of the mint and fresh fruit.
For each portion you'll need:
Layer the toast with yogurt followed by berries, granola and mint. Finish with a drizzle of honey or maple syrup.
