Easy-peasy breakfast toast

This is perfect for a weekend brunch! Admittedly – a little sceptical, we road tested it on two kids… it was a WINNER – "the best breakfast ever".  A good healthy alternative French Toast – and REALLY it's just as good… with the maple syrup soaking into the toast, the crunch of the nuts, seeds and grains, the creaminess of the yoghurt and the lovely freshness of the mint and fresh fruit.  

Easy-peasy breakfast toast

For each portion you'll need:

  • 1 Slice sourdough toast (we used Sceal)
  • 3 tbsp yogurt (we used Mossfield)
  • Small handful blueberries and raspberries
  • Small handful of granola (Nicky's Blend)
  • 1tsp fresh mint leaves, finely chopped
  • Drizzle of honey or maple syrup

Method

Layer the toast with yogurt followed by berries, granola and mint. Finish with a drizzle of honey or maple syrup.
