Ingredients:
- ½ cup Pinhead Oatmeal
- 2 cups water with vegetable buillon
- 1 handful of fresh spinach (or 100gms frozen spinach)
- 2 tbsp crumbled feta cheese
- 1 tsp olive oil
- A pinch of black pepper and chili flakes
- Optional: Poached egg for extra protein
Instructions
- Bring the water with added bouillon to a boil and stir in the oats. Lower the heat and simmer for 20-25 minutes until the oats are tender and creamy.
- In the final 5 minutes of cooking, add the fresh spinach and stir until wilted (if fresh).
- Remove from heat and mix in the olive oil, black pepper, and chili flakes.
