Recipe: Longevity Chia Pot
(serves 3)
Ingredients
- 1 tin coconut milk
- 12 pitted dates
- 1/2 cup organic/wild blueberries
- 1 tbsp lecithin
- 2 tsps beetroot powder
- 1/8 cup lemon juice, more to taste
- 1 pinch of salt
- 2 3/4 tbs chia seeds
- 1/2 cup roasted hazelnuts
- 1/4 teaspoon edible rosewater
- Blueberries, ground pistachio & strawberries to garnish
Directions
- 1. Blend all ingredients, apart from the chia seeds and the garnish at high speed until smooth
- 2. Stir in the chia seeds
- 3. Separate into individual bowls or pots
- 4. Leave in fridge for approx 15 min or overnight if preferred
- 5. Serve cold with extra blueberries, pistachios, and chopped strawberries for crunch and juiciness.
